Cherry Pudding
- 1 cup flour, all-purpose
- 1 large eggs beaten
- 1 cup sugar
- 1/2 cups cherry juice
- 1/2 teaspoon salt
- 1 tablespoon butter melted
- 15 ounces cherries tart, 1 can, drain and reserve juice
- 1 cup walnuts chopped
- 1 teaspoon baking soda mixed with 1 teaspoon water
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon flour, all-purpose
- 1 teaspoon butter
- 1 x cherry juice remaining cherry juice with enough water to measure 1 cup, cook until thick, 5 or 6 minutes.
- Blend together flour, sugar and salt.
- Beat egg, add 1/2 cup cherry juice and melted butter, add baking soda mixture, add to flour, sugar, salt mixture.
- Mix well.
- Add chopped nuts and cherries.
- Pour into a greased loaf pan and bake at 350F (180C) for 45 minutes.
- Remove from oven and poke holes with a fork and pour hot sauce over pudding.
- Cool and refrigerate.
- Serve with whipped cream.
