Cranberry Quick Bread With Variations

  1. Preheat oven to 350*.
  2. Grease and lightly flour 2 - 4 x 8 loaf pans.
  3. Cream sugar with shortening.
  4. Add milk, egg and extracts.
  5. Beat well.
  6. In a separate bowl, mix together flour, baking powder, cinnamon and salt.
  7. Add to creamed mixture.
  8. Stir in cranberries and nuts if using.
  9. Pour into prepared pans.
  10. Bake for 45 - 55 min or until tested done.
