Cranberry Quick Bread With Variations
- 1 cup sugar
- 14 cup shortening
- 1 cup milk
- 1 egg, slightly beaten
- 1 teaspoon vanilla
- 1 teaspoon orange extract
- 2 cups flour
- 3 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 12 cups cranberries, chopped
- 12 cup pecans (optional)
- Preheat oven to 350*.
- Grease and lightly flour 2 - 4 x 8 loaf pans.
- Cream sugar with shortening.
- Add milk, egg and extracts.
- Beat well.
- In a separate bowl, mix together flour, baking powder, cinnamon and salt.
- Add to creamed mixture.
- Stir in cranberries and nuts if using.
- Pour into prepared pans.
- Bake for 45 - 55 min or until tested done.
