Shrimp Creole
- 16 ounces cooked shrimp
- 2 green bell peppers (sliced)
- 1 onion (sliced)
- 1 teaspoon thyme
- 6 ounces tomato paste
- 8 roma tomatoes (diced)
- 1 cup chicken broth
- 12 cup mushroom pieces
- 3 garlic cloves (chopped)
- 3 cups cooked rice
- 3 tablespoons oil
- Saute bellpeppers, mushrooms onions and garlic in oil it usually takes me 5-10 minutes.
- Add tomatoes and thyme.
- Then add broth and tomato paste and let simmer for 10 minutes.
- Lastly add the cooked shrimp.
- Serve over cooked rice, I usually just mix the rice in to make it a one dish meal.
