Mexican Rice
- 1 clove garlic (minced)
- 1/2 small onion, chopped
- 1 tbsp cilantro (sliced)
- 1 (optional) tomato diced
- 2 tbsp tomato sauce
- 1 packages sazon (all purpose seasoning)
- 1 tbsp Goya brand sofrito (optional)
- 1 green onions (chopped)
- 1 tbsp olive oil
- 1 cup rice
- 2 cup water
- 1 dash salt
- 1 lime / lemon
- Heat pan with oil.
- Once heated, place garlic, onion, cilantro, green onions and tomato in pan with oil.
- Let it simmer for a few minutes.
- Add the cup of rice to the pan (medium-low fire) and mix around so that all the simmered ingredients are thoroughly mixed.
- Add tomato sauce, sazon, and sofrito.
- Mix well.
- Add water and salt.
- Once boiling, bring down to a low heat.
- Cover and let sit for approx 20 min.
- Squeeze some lime on top and Enjoy!
