Baked Chicken Parmesan

  1. Salt and pepper the chicken breasts.
  2. Beat the egg with a splash of water in a shallow dish.
  3. Spread the bread crumbs out in a shallow dish or plate.
  4. Heat just enough olive oil to cover the bottom of the pan.
  5. In an assembly line, dip the seasoned chicken into the egg, coat with bread crumbs, and then fry until golden brown.
  6. (The chicken will finish cooking in the oven.)
  7. (If youre using the homemade recipe for the sauce, combine the sauce ingredients and let simmer while preparing the chicken.)
  8. Pour the sauce into a casserole dish and place the golden chicken breasts on top.
  9. Slice fresh mozzarella and place on top of the chicken.
  10. Bake at 400 degrees for 20 25 minutes.
  11. If desired, cook noodles in salted water and serve chicken and sauce on top.
