Baked Spinach With Raisins
- 2 Tbsp. raisins
- 4 eggs, beaten lightly
- 3 Tbsp. softened cream cheese
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1/8 tsp. cinnamon
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
- 3/4 c. half and half
- 3/4 c. grated Monterey Jack cheese
- 1 tsp. white wine vinegar
- In a small bowl, let the raisins soak in hot water for 30 minutes or until they are plump.
- Drain.
- In another bowl, combine well the eggs, cream cheese, salt, nutmeg, cinnamon and stir in the spinach, the raisins, the half and half, the Jack cheese and the vinegar.
- Transfer the mixture to a buttered 9-inch glass pie plate and bake in a preheated 400u0b0 oven for 20 to 25 minutes or until it is set and puffed slightly.
- Cool for 2 to 3 minutes before serving, noting that pie will collapse a bit.
- Serves 6 to 8.
