Jicama Salad

  1. Whisk together minced serrano, cilantro, lime juice, rice vinegar, oil, salt and pepper.
  2. Marinate pineapple chunks and jicama in lime ?
  3. cilantro vinaigrette for 30 minutes.
  4. Arrange lettuce on chilled salad plates.
  5. Remove pineapple and jicama from marinade and place on lettuce.
  6. Top with avocado.
  7. Drizzle vinaigrette over salad.
