Black and White Vegetarian Chili

  1. Cook onion, bell pepper and garlic in oil in a Dutch oven over medium-high heat until tender, about 10 minutes.
  2. Stir in chili powder, cumin and ground red pepper.
  3. Add tomatoes, beans, hominy, Ortega chilies, broth and enchilada sauce.
  4. Cook 10 minutes.
  5. Remove from heat and stir in cilantro.
  6. Sprinkle each serving with cheddar cheese.
