Vegetable Lentil Chili
- 1 quart vegetable broth
- 1 cup water
- 1 (14 ounce) can diced tomatoes
- 34 cup brown lentils
- 1 cup corn
- 1 cup chopped onion
- 1 cup bell pepper
- 13 cup sliced carrot
- 13 cup sliced celery
- 1 garlic clove, minced
- 1 tablespoon chili powder
- 34 teaspoon ground cumin
- 1 bay leaf
- salt and pepper
- Combine all ingredients, except salt and pepper in slow cooker; cover and cook on high 3-4 hours.
- Discard bay leaf; season to taste with salt and pepper.
