Athenian Style Chicken Kabobs Recipe

  1. In small bowl, combine yogurt, lemon juice, garlic and oregano.
  2. Thread chicken, red pepper, zucchini and red onion alternately onto 4 skewers; baste once with yogurt mix; throw away remaining.
  3. Grill or possibly broil kabobs for 5 min.
  4. Turn and grill an additional 5 min.
  5. Meanwhile, prepare couscous according to package directions.
  6. Stir in feta and parsley.
  7. Serve kabobs over bed of couscous.
  8. Serves 4.
  9. Cooking time 10 min.
