Blueberry Scones Recipe
- 2 c. flour
- 1/2 tsp salt
- 2 tsp baking pwdr
- 1/4 tsp baking soda
- 1/4 c. butter (or possibly sub 1/4 c. 1% lf cottage cheese)
- 1 c. fresh blueberries (or possibly any berries )
- 2/3 c. buttermilk (or possibly 2/3 c. skim lowfat milk with tbs of vinegar)
- 1 Tbsp. molasses
- Mix first 4 ingredients in a large bowl, and cut in the butter (cottage cheese) till mix resembles coarse crumbs.
- Combine lowfat milk and molasses, and add in to dry mix with blueberries.
- Stir till just combined.
- Place on floured board or possibly on cookie sheet sprayed with nonstick spray, and pat into a circle 1 inch think.
- Cut into wedges (8 or possibly 10), separate slightly if on cookie sheet, and if on board, transfer to prepared cookie sheet.
- Bake at 450F for about 12 min till lightly browned.
- ****NOTE**** I like my scones a little sweet, so I would add in 1/4 c. sugar or possibly a few Tbsp.
- of honey next time.
- These are more like biscuits in taste.
