Thai-Citrus Pasta Salad
- Vinaigrette
- 1-1/3 cups frozen orange juice concentrate, thawed
- 1 cup fresh lime juice
- 1 cup canola oil
- 3/4 cup honey
- 6 Tbsp. lite soy sauce
- 2 cups Kraft Smooth Peanut Butter
- 1-1/3 cups cilantro, chopped
- 1/3 cup garlic cloves, minced
- 1/3 cup gingerroot, minced
- 2-1/2 Tbsp. sesame oil
- 1 Tbsp. salt
- 1 Tbsp. coarse black pepper
- Pasta
- capellini, uncooked
- 3 cups green onions, cut diagonally into thin slices
- 2 cups carrots, coarsely shredded
- 1-1/2 qt. grape tomatoes, halved King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups peanuts, chopped
- Vinaigrette: Stir juice concentrate, lime juice, oil, honey and soy sauce in medium bowl with wire whisk until well blended.
- Add peanut butter; mix well.
- Stir in remaining ingredients; set aside.
- Pasta: Cook pasta as directed on package; drain.
- Rinse and drain again.
- Place in large bowl.
- Add vegetables; mix lightly.
- Add Vinaigrette; toss to coat.
- Sprinkle with peanuts.
