Quinoa Soup With Corn

  1. In a small soup pot, combine the broth, quinoa, garlic, cayenne, and 1 3/4 cups water.
  2. Bring to a boil, reduce the heat to medium, and cook 10 minutes.
  3. Add the corn kernels and cook until hot and tender, about 3 minutes.
  4. Stir in the cilantro and cook 1 minute.
  5. Remove from the heat and stir in the lime juice.
  6. Serve hot or cold.
