Bran Raisin Muffins Recipe
- 1 c. Kellogg's All Bran
- 1 1/4 c. seedless raisins
- 1 c. boiling water
- 1 c. molasses (Grandma's)
- 1/2 c. corn oil
- 2 Large eggs, well beaten
- 2 c. fresh buttermilk (not pwdr)
- 2 1/2 c. flour
- 1 teaspoon salt
- 2 1/2 teaspoon baking soda
- 1/2 c. sugar
- Minced nuts (opt.)
- Preheat oven to 400 degrees.
- Combine first 3 ingredients.
- Set aside to cold.
- Mix next 4 ingredients and then add in dry ingredients, then the cooled first mix.
- Stir in an additional 1 1/2 c. dry all bran.
- Fill muffin pans (lined) about 3/4 full.
- Bake in 400 degree oven 20 min.
- Check after 15 min.
- Cold in pans.
- Yield: 2 1/2 to 3 dozen muffins.
- This recipe is 150 years old.
- Always moist.
- Freezes well.
