Spicy Enchiladas
- 1 1/2 lb. ground beef, turkey or chicken
- 1/2 c. chopped onions
- 2 large jalapeno peppers
- 2 extra hot links, chopped
- 1 doz. corn or flour tortillas
- 1 (28 oz.) can enchilada sauce
- 1 large can spicy refried beans
- 1 can chopped olives
- Monterey and Cheddar cheese
- Preheat oven to 350u0b0.
- Brown the ground meat; boil the chicken with onion and pepper.
- Drain excess grease from ground meat and water from chicken.
- Add hot links; mix well.
- Heat enchilada sauce and refried beans.
- Dip tortilla in sauce; spread refried beans on tortilla.
- Add meat; sprinkle small amount of cheese and fold with seams side down.
- Add remaining cheese on top and pour remaining sauce over top.
- Bake until cheese melts.
- If desired, sprinkle chopped olives, sour cream and guacamole (spicy or mild).
- Bake at 350u0b0.
