Baked Hush Puppies Recipe
- Nonstick cooking spray
- 1/2 c. Yellow cornmeal
- 1/4 c. Unbleached all-purpose flour
- 3/4 tsp Baking pwdr
- 1/2 tsp Granulated sugar
- 1/4 tsp Salt (optional)
- 1/2 tsp Celery flakes
- 1/4 tsp Cayenne pepper
- 1 x Egg white beaten
- 1/4 c. Skim lowfat milk
- 1 Tbsp. Vegetable oil
- 1/4 c. Finely-minced scallion, including green top
- Heat oven to 425 degrees.
- Using nonstick cooking spray, coat miniature muffin pan (1 3/4-inch c.).
- In medium-sized bowl, combine cornmeal, flour, baking pwdr, sugar, salt, celery flakes, and cayenne pepper; stir till well blended.
- In a small bowl, combine egg white, lowfat milk, and vegetable oil; stir well.
- Add in liquids to dry ingredients; stir just till blended.
- Stir in scallion.
- Spoon about 1 Tbsp.
- batter into each muffin c.. Bake till hush puppies are golden, about 15 to 20 min.
- Remove immediately; serve hot.
- This recipe yields 12 servings.
