Garlic Scape Pesto with Soba Noodles
- 1 whole Garlic Scape
- 1- 1/2 Tablespoon Extra Virgin Olive Oil, Divided
- 3/4 cups Ricotta
- 1/2 cups Parmesan Cheese, Grated
- 1 pinch Salt And Pepper
- 1/2 pounds Soba Noodles
- Combine garlic scape, 1 tablespoon of the oil, ricotta, Parmesan and salt and pepper in a food processor.
- Pulse until garlic is finely chopped and combined.
- Drizzle in remaining olive oil while continuing to pulse.
- Set aside.
- Cook soba noodles according to directions; drain reserving 1/2 cup of the pasta water.
- Return noodles to pot, add as much pesto as desired and toss to fully coat noodles.
- Add as much reserved pasta water as needed to thin and create a creamy pesto sauce.
- Serve immediately.
