Herbed Cornish Hen With Pasta Recipe
- 2-3 cornish game hens, halved
- 1/4 c. vegetable oil
- 3 tbsp. lemon juice
- 3/4 c. melted butter
- 3/4 c. firmly packed fresh parsley
- 1 sm. garlic clove, cut in half
- 1/2 teaspoon salt (optional)
- 1 tbsp. dry oregano
- 1/2 teaspoon EACH basil, thyme
- Pepper to taste
- 8 ounce. spaghetti
- Combine oil and lemon juice and pour over hens, coating proportionately.
- Bake one hour at 350 degrees in preheated oven.
- In food processor, combine remaining seasoning ingredients.
- Process till parsley is chopped; set aside.
- During last 15 min of baking, brush hens with half the herb mix.
- At the time the hens are seasoned, bring water for spaghetti to rapid boil in pot and cook; drain.
- Toss with remaining herb mix.
- Place cooked pasta on serving platter.
- Arrange hens on top and serve immediately.
- Serves 4-6.
