sig's Tomato,Feta and Gorgonzola salad in Avocado
- 2 ripe vine grown tomatoes ,chopped finely
- 1 tbsp extra virgin olive oil
- 50 grams each Feta and Gorgonzola, diced finely
- 2 tbsp quality olives of choice ,stoned
- 1 tbsp torn basil leaves
- 1/2 small pickled jalapeno pepper chopped very finely
- 1 pinch each salt and pepper
- 1/2 of a lemon juice only
- 2 ripe .Hass if available) avocado ,halved and stoned
- finely chop tomatoes,place in bowl,drizzle with oil and season with salt and pepper,marinade for 30 minutes
- dice the cheeses add to tomatoes ,add olives and jalapeno pepper, tear the basil leaves add to the salad
- cut avocado in half and remove stone when ready to serve
- squeeze the lemon juice over advocado ,so that they do not discolour.
- fill the cavaties with the salad and serve with a slice of lemon
