Farmer's House Recipe Udon with Grated Yamaimo and Umeboshi
- 2 portions Udon noodles
- 100 grams Nagaimo
- 2 Green onions or scallions
- 2 tsp Umeboshi paste
- 1 tbsp Ground sesame seeds
- 1 tbsp Katakuriko
- 600 ml Water
- 6 tbsp Dashi soy sauce
- 1 Salt
- Peel the nagaimo yam and grate it.
- Slice the green onion diagonally.
- Heat dashi soup and thicken with katakuriko dissolved with 1 tablespoon of water.
- Add the onion and bring to a boil.
- Turn the heat off and add the ground sesame seeds.
- Transfer the warmed udon noodles into a serving bowl and pour over the dashi soup.
- Garnish with the grated nagaimo and umeboshi paste on top.
