Seafood Marinara Con Linguine
- 1/4 c. olive oil
- 3/4 c. onions, chopped
- 3 cloves garlic, chopped fine
- 1 (8 oz.) can stewed tomatoes
- 1 (4 oz.) can tomato sauce
- 1/2 lb. medium shrimp, shelled and deveined
- 1/2 lb. bay scallops
- 1/2 c. dry red wine
- 1 Tbsp. basil
- 1 tsp. oregano
- 2 tsp. salt
- 1 tsp. pepper
- 1 lb. linguine
- Parmesan cheese
- In deep frying pan combine oil, onions and garlic; saute slowly until soft.
- Add tomatoes and tomato sauce.
- Cook about 10 minutes on medium heat.
- Add shrimp, scallops, wine, basil, oregano, salt and pepper.
- Cook, uncovered, on medium heat about 10 minutes.
- Prepare linguine according to box directions; drain and top with sauce.
- Sprinkle Parmesan cheese on top.
