Halibut Enchiladas

  1. Heat oven to 350 degrees F.
  2. Place fish in single layer in shallow baking dish sprayed with cooking spray.
  3. Bake 25 min.
  4. or until fish flakes easily with fork.
  5. Break fish into small pieces with fork; place in medium bowl.
  6. Add 1/2 cup cheese, sour cream, Miracle Whip, onions, 1/4 cup olives, chiles and seasoning mix; mix lightly.
  7. Spread half the enchilada sauce onto bottom of 13x9-inch baking dish.
  8. Spoon fish mixture down centres of tortillas; roll up.
  9. Place, seam sides down, over sauce in baking dish; cover with remaining sauce and cheese.
  10. Bake 25 to 30 min.
  11. or until heated through.
  12. Top with lettuce, tomatoes and remaining olives.
