Mango and Roasted Corn Salsa
- 1-1/2 cup fresh corn kernels
- 1 tsp. vegetable oil
- 1-1/2 cup diced peeled mango
- 1/4 cup fresh lemon juice
- 2 tbsp. diced sweet onion
- 2 tbsp. minced fresh mint
- 2 tbsp. minced fresh cilantro
- 1-1/2 tsp. grated peeled fresh ginger
- 1/4 tsp. salt
- Preheat oven to 400F.
- Combine corn and oil, tossing well.
- Place on a baking sheet, spreading evenly.
- Bake at 400F for 15 minutes.
- Cool.
- Combine corn, mango, and remaining ingredients in a bowl; toss gently.
