Turkey-Rice Soup

  1. Heat oil in large saucepan on medium-high heat.
  2. Add vegetables; cook and stir 3 to 5 min.
  3. or until crisp-tender.
  4. Add broth, water and thyme; stir.
  5. Bring to boil.
  6. Stir in rice; simmer on medium-low heat 15 min., stirring occasionally.
  7. Add turkey; simmer 5 min.
  8. or until rice is tender and turkey is heated through, stirring occasionally.
  9. Stir in parsley just before serving.
  10. Serve with crackers.
