Turkey-Rice Soup
- 2 tsp. oil
- 2 stalks celery, chopped
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 carrot, chopped Target 2 lb For $3.00 thru 02/06
- 1 L (4 cups) 25%-less-sodium chicken broth
- 2 cups water
- 1 tsp. dried thyme leaves
- 1/3 cup long-grain brown rice, uncooked
- 1-1/2 cups chopped roasted turkey (white meat)
- 1 tsp. chopped fresh parsley
- whole wheat saltine crackers
- Heat oil in large saucepan on medium-high heat.
- Add vegetables; cook and stir 3 to 5 min.
- or until crisp-tender.
- Add broth, water and thyme; stir.
- Bring to boil.
- Stir in rice; simmer on medium-low heat 15 min., stirring occasionally.
- Add turkey; simmer 5 min.
- or until rice is tender and turkey is heated through, stirring occasionally.
- Stir in parsley just before serving.
- Serve with crackers.
