Washday Soup

  1. Cover beans, peas, rice and barley with cold water and let stand overnight.
  2. Bring to a boil in the same water, adding vegetables, salt and pepper.
  3. Simmer about 1 hour.
  4. Add ham bone and simmer about 1 hour longer.
  5. If water cooks away, add a bit more from time to time.
  6. Remove ham bone, pick off bits of meat and return them to soup.
  7. Serves 6 to 8.
