Sushi Shrimp Salad
- 4 cups rice cooked
- 2 cups cucumbers diced, seeded
- 1 cup green peas frozen, thawed
- 1/2 cup radishes thinly sliced
- 1/4 cup scallions, spring or green onions sliced
- 1 pound shrimp cooked, peeled, deveined
- 1 1/2 quarts spinach rinsed, crisped fresh
- 1 x radishes whole
- 1 x salt
- 1/2 cup rice vinegar
- 2 tablespoons ginger fresh, minced
- 2 tablespoons horseradish prepared
- 2 tablespoons sesame oil
- In a large bowl, combine cooked rice, cucumber, peas, sliced radishes, onions, and dressing.
- Gently mix in shrimp.
- Arrange spinach leaves on a platter and spoon sushi salad into the center.
- Garnish with whole radishes.
- Season to taste with salt.
