Crispy Shrimp & Vegetable Fritters
- 1 Squid
- 10 small Shrimp
- 1 bunch Mitsuba
- 2 Japanese leek
- 1/2 tbsp Baking powder
- 200 ml Cake flour
- 1/2 Egg
- 1 egg + water = 180ml Ice cold water
- 1/2 tsp Sugar
- 1 Homemade mentsuyu
- Prepare the shrimp and cut in half.
- Skin the squid and cut into 3 cm pieces.
- Cut the leeks into 1 cm pieces and the mitsuba into 3 cm pieces.
- Coat the squid and shrimp with flour.
- Put the ingredients into a bowl to make the coating.
- Divide the squid and shrimp into 4 portions, place each portion on a separate plate, and cover with the coating.
- Deep-fry in 170C oil until golden brown.
