Stuffed Bell Peppers
- 2 green peppers, cored
- 13 cup onion, chopped
- 1 cup carrot, chopped
- 1 cup tomatoes, chopped
- 1 lb ground beef
- 1 dash olive oil
- 1 12 cups seasoned Spanish rice, cooked (I used boxed spanish rice, but you could use anything, really)
- 1 teaspoon italian seasoning
- 1 teaspoon garlic salt
- 1 dash pepper, to taste
- 12 cup cheese, shredded
- ketchup
- saute onions in olive oil.
- add beef and brown.
- meanwhile, core peppers and hollow.
- either boil for 5 minutes or cook on vegetable setting in microwave.
- add carrots, garlic, tomatoes, seasonings and rice.
- stir until combined.
- fill peppers with filling.
- bake in 350 for 15 minutes.
- top with shredded cheese and bake 5 minutes longer until melted.
- serve with additional filling if desired.
- top with ketchup if desired.
