Fresh Mex Tacos
- 2 cups Diced Fresh Tomatoes
- 2 cups Diced Fresh Tomatillos
- 1 bunch Fresh Cilantro
- 1/2 whole Red Onion, Diced
- 1 whole Fresh Jalapeno, Minced
- 2 dashes Rice Vinegar
- 3 whole Tortillas
- 3 Tablespoons Oil
- 1 cup Shredded Cheese
- Mix the tomatoes, tomatillos, cilantro, onion and jalpenos in a bowl.
- Sprinkle with vinegar and mix together.
- Brush tortillas with oil on both sides and grill until crunchy.
- Break into small pieces and place on a microwave safe plate.
- Spread cheese on top and microwave until cheese melts.
- Top with tomato/tomatillo mixture and serve.
