Pumpkin Minestra
- 2 lbs French beans
- 2 swede
- 2 small vegetable marrows
- 14 lb haricot beans
- 4 garlic cloves
- 2 tomatoes
- 1 lb pumpkin
- 2 potatoes
- parsley
- sweet basil (plenty)
- 6 ounces cheese
- 1 cup oil
- saffron
- chop all vegetables and boil together.
- when the water begins to boil add the oil.
- pound the garlic, parsley, basil a little of the cooked vegetables, cheese and saffron.
- add to the half cooked vegetables and cook until vegetables are tender, making sure not to over cook or burn.
- when ready serve with spaghetti and grated cheese.
