Chicken Adobo

  1. Put all ingredients (saving 1/4 cup of soy sauce) in a pot (with lid on) and cook on high for 35 min stirring occasionally.
  2. Add another 1/4 cup of soy sauce to darken the chicken and continue to cook.
  3. Should be ready in about another 10 minutes when the chicken starts to separate from the bone.
  4. Serve with jasmine rice.
