Broccoli Cauliflower Cheese

  1. cut the broccoli and cauliflower into florets the same size.
  2. bring a pan to the boil and add the florets.
  3. reduce to a simmer and cook until just cooked (a fork goes in easily)
  4. drain and leave to cool in a sieve while you make the cheese sauce
  5. melt the butter in a pan and add the flour.
  6. mix until combined to make a roux.
  7. keep moving about the pan for a few minutes.
  8. add a splash of milk at a time and stir thoroughly until completely combined.
  9. repeat until all milk is used up
  10. Bring to the boil constantly stirring.
  11. It will start to thicken.
  12. take off the heat and add half the cheese.
  13. stir until melted
  14. put the florets into a casserole dish so there is an even layer.
  15. pour over the sauce to cover the florets and sprinkle with the rest of the cheese.
  16. place under a grill or in the oven until the cheese has melted with a bit of colour
