Broccoli Cauliflower Cheese
- 1/2 medium broccoli
- 1/2 medium cauliflower
- 2 tbsp butter
- 2 tbsp All purpose flour
- 300 ml milk
- 200 grams grated hard cheese ( i used cheddar but any good melting cheese)
- 1/2 tsp salt and pepper to taste
- cut the broccoli and cauliflower into florets the same size.
- bring a pan to the boil and add the florets.
- reduce to a simmer and cook until just cooked (a fork goes in easily)
- drain and leave to cool in a sieve while you make the cheese sauce
- melt the butter in a pan and add the flour.
- mix until combined to make a roux.
- keep moving about the pan for a few minutes.
- add a splash of milk at a time and stir thoroughly until completely combined.
- repeat until all milk is used up
- Bring to the boil constantly stirring.
- It will start to thicken.
- take off the heat and add half the cheese.
- stir until melted
- put the florets into a casserole dish so there is an even layer.
- pour over the sauce to cover the florets and sprinkle with the rest of the cheese.
- place under a grill or in the oven until the cheese has melted with a bit of colour
