Olive Garden Marinara (Copycat)
- 1/4 cup olive oil, extra virgin
- 3 garlic cloves, peeled
- 1 tbsp tomato paste
- 35 oz can whole peeled Italian tomatoes with their juices, crushed by hand
- 2 basil sprigs
- 1 pinch sugar
- 1 salt and fresh cracked pepper, to taste
- In large saucepan heat oil.
- Add garlic and over moderate heat cook about 5 minutes until lightly golden.
- Add tomato paste and stir for about a minute, then add canned tomatoes and juices.
- Stir in sugar and basil, season with salt and pepper then bring to a low boil.
- Allow to simmer over low heat while stirring occasionally until it reduces and thickens, about 30 minutes.
- Discard basil and garlic prior to serving.
