Cheesy Broccoli
- 2 bunches broccoli, cut into spears
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 12 teaspoon fresh ground pepper
- 2 cups milk
- 200 g cream cheese, softened
- 2 cups cheddar cheese, grated
- 12 cup blue cheese, crumbled
- 12 cup walnuts, chopped
- Steam the broccoli spears until they are crisp-tender.
- Melt butter in a saucepan.
- Add the flour and pepper and stir constantly for half a minute, until the mixture is smooth and bubbly.
- Add the milk and cream cheese.
- Stir constantly until the sauce thickens and reaches the boiling point.
- Add cheddar cheese and blue cheese.
- Keep stirring until the cheeses are melted.
- This takes anywhere between 1-2 minutes.
- Stir in the chopped walnuts once and remove from heat.
- Pour this mixture over the steamed broccoli.
- Serve warm.

- TIP: Do not discard the tough ends of broccoli stalks.
- Use them for making soups.
