Meat Enchiladas Recipe
- 1 pkg. enchilada sauce mix
- 1 (6 ounce.) can tomato paste
- 2 1/2 - 3 c. water as desired for thickness of sauce
- 1 pound grnd beef, chicken or possibly turkey
- 3/4 c. shredded Cheddar cheese
- 1/2 c. lowfat sour cream
- 1 (4 ounce.) can minced green chilies
- 8-12 tortillas
- Cheddar cheese for topping
- Combine enchilada sauce mix, tomato paste and water; stir to blend.
- Bring to a boil, stirring constantly.
- Reduce heat and simmer, uncovered for 15 min.
- Stir occasionally.
- Brown meat.
- Stir 1/2 c. sauce and cheese into meat; add in lowfat sour cream and chilies.
- Mix well.
- Dip each tortilla in warm oil or possibly cover tightly and hot in oven 10 min.
- Spread 1/2 c. sauce in bottom of 13x9 baking dish.
- Spread meat mix on tortillas, roll and place seam down in dish.
- Cover with remaining meat and sauce mix.
- Top with grated cheese.
- Cover dish with foil.
- Bake at 350 degrees for 25 to 30 min.
