Sweet Vidalia Onion Latkes

  1. Place vegetables in a strainer.
  2. Rinse with cool water until water runs clear.
  3. Drain well.
  4. Squeeze out excess water and pat dry with paper towel.
  5. Combine grated vegetables with egg, flour , salt and pepper.
  6. Heat vegetable oil in large skillet over medium-heat.
  7. Working in batches and using 2-3 tablespoons of vegetable mixture per pancake drop mixture into skillet.
  8. Flatten slightly and cook until undersides are golden brown.
  9. Flip and brown on the other side.
  10. Serve with sour cream.
