Berry-Citrus Squares
- 2 cups finely crushed pretzels
- 2/3 cup butter or margarine, melted
- 1/3 cup sugar
- 1-1/2 cups boiling water
- 1 pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Cranberry Flavor Gelatin
- 1 cup cold water
- 1-1/2 tsp. grated lime zest Safeway 3 ct For $1.00 thru 02/09
- 1 pt. (2 cups) vanilla ice cream, softened
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
- Preheat oven to 350F.
- Mix pretzels, butter and sugar in 13x9-inch baking pan.
- Press firmly onto bottom of pan.
- Bake 10 min.
- Cool.
- Stir boiling water into dry gelatin mix in large bowl at least 2 min.
- until completely dissolved.
- Add cold water and lime zest; stir.
- Gradually add ice cream, stirring with wire whisk until ice cream is completely melted and mixture is well blended.
- Spoon over crust.
- Refrigerate 3 hours or until firm.
- Spread whipped topping evenly over top of dessert.
- Cut into 16 squares.
- Garnish as desired.
- Store leftover squares in refrigerator.
