Poached Eggs Italian Style

  1. Heat oil in medium skillet on medium-high heat.
  2. Add onions and garlic; cook and stir 5 min.
  3. or until onions are crisp-tender.
  4. Stir in next 3 ingredients.
  5. Bring to boil; simmer on medium-low heat 20 min., stirring occasionally.
  6. Break 1 egg into small bowl; gently slip into tomato mixture.
  7. Repeat with remaining eggs; cover.
  8. Cook at a gentle simmer 10 min.
  9. Remove from heat.
  10. Uncover; let stand 2 min.
  11. or until whites are completely set and yolks begin to thicken but do not become firm.
  12. Use slotted spoon to transfer eggs to toast slices.
  13. Stir Parmesan into sauce; spoon over eggs.
  14. Sprinkle with parsley.
