Panfried Calf's Liver and Bacon

  1. In 12-inch skillet, cook bacon over medium-high heat until browned.
  2. With slotted spoon, transfer bacon to paper towels to drain; keep warm.
  3. Place flour on waxed paper.
  4. Coat liver with flour, shaking off excess.
  5. Discard all but 1 tablespoon bacon drippings from skillet.
  6. Add liver slices to hot drippings in skillet and cook over medium-high heat until crisp and browned but slightly pink inside, 1 1/2 to 2 minutes per side.
  7. (Dont overcook, or liver will be tough.)
  8. Sprinkle with salt.
  9. Place liver and bacon on warm platter; sprinkle with parsley and serve with lemon wedges.
  10. Makes 4 main-dish servings.
