Schweinbraten(Roast Pork)
- 3 1/2 lb. pork loin (8 rib)
- onion salt
- marjoram
- pepper
- 4 c. sauerkraut, drained
- 1/2 c. apple cider
- 4 Tbsp. butter
- 2 apples
- apple slices (for garnish)
- Sprinkle pork with onion salt, marjoram and pepper.
- Secure on spit; insert thermometer.
- Adjust spit about 8 inches from heat source, placing foil pan under pork to catch drippings.
- Roast 15 minutes or bake uncovered on rack at 350u0b0 until the thermometer registers 170u0b0 to 185u0b0 according to family taste.
- Allow 35 to 40 minutes per pound for roasting.
- Shortly before serving, combine in skillet the sauerkraut, thinly sliced apples, cider and butter. Cover and simmer 5 minutes or until apples are tender.
- Garnish with extra apple slices and parsley.
- Serve with pork.
