Holiday Irish Shamrock Cookies
- 1/2 cup butter, unsalted softened
- 3 ounces instant pudding mix, pistachio
- 113 cups biscuit baking mix (bisquick)
- 1 large eggs
- 1 tablespoon sugar
- Preheat oven to 350F (180C) F (175 degrees C).
- Lightly coat baking sheet with cooking spray or grease with butter.
- Add the butter and the pudding mix in a big bowl with an electric mixer, cream until light, fluffy and smooth.
- Blent in the baking mix, egg and sugar until well blended.
- On a lightly floured working surface or cutting board, roll out the dough to 38 inch to 1/2 inch thickness and use a shamrock cookie cutter to cut out the cookies.
- Put the cookies on the prepared baking sheet and bake about 10 minutes or until lightly browned on the edges.
- Allow cookies to cool completely on wire rack.
- Frost with green colored icing if needed.
- Let the frosting set completely and store at an air-tight container.
