Black Bottom Cups
- 8 oz. cream cheese
- 1 unbeaten egg
- 1/3 c. sugar
- 1/8 tsp. salt
- 6 oz. pkg. semi-sweet chocolate chips
- 1 1/2 c. sifted flour
- 1 c. sugar
- 1/4 c. cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. water
- 1 Tbsp. vinegar
- 1 tsp. vanilla
- 1/2 c. cooking oil
- Combine cream cheese, unbeaten egg, 1/3 cup sugar and 1/8 teaspoon salt and mix well.
- Stir chocolate chips into the cream cheese mixture.
- In another bowl, sift the following together: flour, sugar, cocoa, baking soda and salt.
- Add the remaining ingredients to the flour mixture.
- Fill 24 muffin cups one-third full with the chocolate batter.
- Top each one with a heaping teaspoonful of the cream cheese mixture.
- Bake 30 to 35 minutes at 350u0b0.
