Potato Salad

  1. Mix sugar and mayonnaise and let stand until dissolved (it will be shiny).
  2. Add the vinegar to the mayonnaise and sugar mixture.
  3. This dressing should be sweet rather than sour but not too sweet.
  4. Adjust to your taste.
  5. Cook potatoes till tender and drain.
  6. Cool slightly.
  7. Peel and cut potatos into bite size pieces.
  8. Cut cooked eggs into bite size pieces.
  9. Add onions and seasonings.
  10. Add dressing, tossing so that all the potatos are covered but not soaked.
  11. Slice an egg on top and sprinkle with paprika if desired.
  12. Cover and chill until ready to serve.
