Cajun Style Drumsticks
- 8 chicken drumsticks
- 2 c. buttermilk
- 1/2 c. butter or margarine, melted
- 1/4 c. cornmeal
- 1 1/2 tsp. garlic powder
- 1 1/2 tsp. onion powder
- 1 1/2 tsp. chili powder
- 1 1/2 tsp. dried whole thyme
- 1 1/2 tsp. dried whole oregano
- 1 1/2 tsp. paprika
- 1 tsp. salt
- 3/4 tsp. ground cumin
- 1/2 tsp. black pepper
- 1/2 tsp. white pepper
- 1/2 tsp. red pepper
- Place chicken in a shallow dish; pour buttermilk over top. Cover and chill for 8 hours.
- Place butter in a shallow dish; set aside.
- Combine flour, cornmeal and seasonings in a plastic bag. Drain chicken; roll in butter and place in bag, 1 or 2 pieces at a time.
- Close bag securely and shake until well coated.
- Arrange chicken on a rack placed over a roasting pan; drizzle with any remaining butter.
- Bake at 400u0b0 for 15 minutes.
- Turn chicken; reduce heat to 350u0b0 and bake for 30 or 35 minutes or until done. Yield:
- 4 servings.
