Cajun Style Drumsticks

  1. Place chicken in a shallow dish; pour buttermilk over top. Cover and chill for 8 hours.
  2. Place butter in a shallow dish; set aside.
  3. Combine flour, cornmeal and seasonings in a plastic bag. Drain chicken; roll in butter and place in bag, 1 or 2 pieces at a time.
  4. Close bag securely and shake until well coated.
  5. Arrange chicken on a rack placed over a roasting pan; drizzle with any remaining butter.
  6. Bake at 400u0b0 for 15 minutes.
  7. Turn chicken; reduce heat to 350u0b0 and bake for 30 or 35 minutes or until done. Yield:
  8. 4 servings.
