Chicken Cacciatore(4 Servings)
- 2 1/2 lb. broiler-fryer, cut up
- 1/4 c. cooking oil
- 1 medium green pepper, chopped
- 1 1/4 tsp. salt
- 2 bay leaves
- 1 (8 oz.) can tomato sauce
- 1/4 c. flour
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1/8 tsp. pepper
- 1 (16 oz.) can tomatoes
- 1/4 c. dry white wine
- 2 Tbsp. chopped parsley
- Flour chicken pieces.
- Heat frypan to 340u0b0.
- Add chicken and lightly brown.
- Remove chicken.
- Add onion, green pepper and garlic.
- Cook about 3 minutes.
- Add chicken and all ingredients except parsley.
- Cover.
- Reduce heat to simmer and cook 30 minutes until chicken is tender.
- Turn chicken occasionally and add parsley and serve.
- Yields 4 servings.
