Strawberry Bellini

• 1 pint strawberries, stemmed, plus 8 long-stemmed strawberries, for garnish
• 2 tablespoons simple syrup, recipe follows
• Champagne
• 2 parts sugar
• 2 parts water

1. Place strawberries and simple syrup into a blender.
2. Strain strawberry mixture.
3. Pour into glasses and top with Champagne.
4. Garnish each with a long-stemmed strawberry.
5. Bring sugar and water to a boil.
6. Simmer until the sugar dissolves.
7. Remove from the heat and allow to cool.
