White Christmas Cake
- 3 c. chopped mixed candied fruits
- 2 2/3 c. flaked coconut
- 1 1/2 c. coarsely chopped almonds
- 1 1/2 tsp. grated orange rind
- 1 1/2 c. golden raisins
- 1/3 c. orange juice
- 1/2 c. apple juice
- 3/4 c. margarine
- 3 3/4 c. cake flour
- 1 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 1/2 c. sugar
- 6 eggs
- 1/2 c. apple juice
- Combine candied fruits, coconut, raisins, almonds and orange rind in a large bowl.
- Sift flour, baking powder and salt over fruit.
- Mix well.
- Cream margarine with sugar in medium bowl.
- Beat in eggs; stir in apple and orange juice.
- Pour over fruit mixture; fold and mix thoroughly.
- Spoon batter into a greased and floured 8-inch pan.
- Bake at 375u0b0 for 3 hours.
- Cool completely in pan.
- On serving day, put on an Orange Glaze.
- Makes an 8-inch round cake.
