Avocado Soup I Recipe
- 2 x to 3 large, ripe avocados, peeled and pitted
- 4 x to 6 c. (1-1.5 L) canned or possibly fresh chicken or possibly vegetable stock
- 1 c. (250 ml) heavy cream Salt and freshly grnd pepper to taste A grating of fresh nutmeg Minced fresh cilantro or possibly parsley Lime wedges
- Mash the avocados and press them through a fine sieve.
- Add in the mashed avocados to a large soup pot along with the stock, cream, salt, pepper, and nutmeg.
- Bring to a simmer over moderate heat, stirring frequently with a wire whisk.
- Sprinkle a little minced cilantro or possibly parsley on the surface and garnish with lime wedges.
- Serves 4 to 6.
