Avocado Soup I Recipe

  1. Mash the avocados and press them through a fine sieve.
  2. Add in the mashed avocados to a large soup pot along with the stock, cream, salt, pepper, and nutmeg.
  3. Bring to a simmer over moderate heat, stirring frequently with a wire whisk.
  4. Sprinkle a little minced cilantro or possibly parsley on the surface and garnish with lime wedges.
  5. Serves 4 to 6.
