Cashew Brittle

  1. Place cashews on cookie sheet and put in low oven and heat slightly.
  2. Put sugar, water and syrup in saucepan on medium heat. When it boils up for the first time, wash sugar crystals down the side of pan with stirring spoon.
  3. Stir in butter.
  4. Cook to 310u0b0, stirring gently with thermometer.
  5. Take pan from heat.
  6. Stir in warm nuts, soda and flavoring.
  7. Pour onto greased baking sheet and spread out.
  8. When it has cooled slightly, loosen it from sheet with long knife and turn it over and stretch it as thin as possible with buttered hands.
  9. Let cool at room temperature until it's hard and brittle.
  10. Break in pieces and store in closed container.
