Chicken a l' Orange

  1. Mix stuffing mix and orange juice.
  2. Let stand 10 minutes or until juice is absorbed, stirring occasionally.
  3. Set aside.
  4. Butterfly chicken breasts by cutting a lengthwise slit in one side of each breast and opening the breast up.
  5. Season with salt and pepper to taste; fill each with 1/4 cup of the stuffing.
  6. Close breasts to their original shapes; pat lightly to flatten.
  7. Place on parchment-covered full sheet pans.
  8. (Or, use half sheet pan for trial recipe.)
  9. Brush chicken with dressing.
  10. Bake in 325F-convection oven (or 375F-conventional oven) for 9 to 11 minutes or until internal temperature of chicken registers 160F.
